What is Lebkuchen?

Lebkuchen, also called Pfefferkuchen, is a German variety of gingerbread, a kind of cookie backed with ginger, honey, cinamon, and other oriental spices, but without any yeast.

Originally from Southern Germany, lebkuchen became a Christmas time favourite all over Germany.

In 1927 E. Otto Schmidt in Nuremberg received a surprise form his brother in Thuringia: a railroad car full of gingerbread cookies! Now you come up with an idea of how to sell a railroad carload! Otto did: He packaged assorted cookies into gift boxes and ran ads in national newspapers. The gingerbread cookie mail business was born!
